It is a Vinho Verde obtained exclusively from the rigorous selection of the most distinguished white grape variety in the region – Alvarinho, whose grapes are harvested in early September, in their perfect state of maturation. This is followed by total destemming and a peculiar cold maceration process. Then the grapes are pumped to pneumatic pressing at low pressure, the pressed must is then decanted for about 8 hours at 10 ºC and transferred to alcoholic fermentation vats, a process in which only selected yeasts are used and which takes approximately 10 days. , which takes place at an automatically controlled temperature of 14ºC. After the degradation of all the sugars, the wine is subjected to a Bâtonnage process for about 3 months, with the aim of giving it more structure, volume and longevity.
WINEMAKER’S TASTING NOTES
It is a citrine colored wine, with an aroma of tropical fruits and mineral notes, enveloping, fresh and persistent. Elegant wine with aromatic sobriety, which makes it a pleasant companion for very special moments.
It is a pleasant and harmonious companion for aperitifs and various meat, poultry, fish or seafood dishes. It should be consumed at a temperature between 10 and 12 ºC.
