The result of selecting green fruits, harvested between November and December in extensive traditional olive groves. The olive oil is extracted through mechanical processes in a continuous two-phase line, at a maximum temperature of 30°C. After gravity decantation, it undergoes filtration through an earth filter and is stored in stainless steel tanks.
Green fruity olive oil, with a fresh and intense aroma of freshly cut grass. On the palate, it reveals a perfect balance between moderate and persistent bitterness and spiciness, making it a top-choice olive oil.
